Gorgeous Greek Salad; Day 28

Delicious fresh salad ingredients are easy to come by in the Mediterranean.

Today we will be re-creating a Greek Salad.

The crisp green lettuce leaves, and bite of sweet tomatoes break up the creaminess of feta cheese.

 

Greek Salad

Core Ingredients

Serves 4:

Ingredients:

1 diced tomato
1/2 an avocado diced
1/2 a small apple cucumber – peeled
8 Kalamata olives – de-stoned and halved
130g of Mesculin Salad
50g of Feta Cheese
1 tsp of olive oil
1 tsp of balsamic

Method:

  1. Add the tomato, avocado and cucumber to a small bowl.
    Tomato Marinating
  2. Drizzle the oilve oil and balsamic on top. Stir to combine.
  3. Leave these to marinate for five – ten minutes.
  4. De-stone and halve the olives.
  5. Add the mesculin leaves to a bowl and sprinkle the olives over it.
  6. Crumb the feta over the top and toss to combine.
  7. Add the tomatoes, avocados and cucumber mix. Then toss these together.
  8. Serve.

Today is officially the last day of our food challenge, however due to a number of dinners at friend’s houses and a horrible head cold, we will be extending to Friday!

    I don’t know how you are keeping up with the recipes, photographing, and documenting it all! What’s the most interesting thing, so far, that you’ve learned or gained from this challenge? This salad looks so fresh and inviting…congrats on the challenge! Once my kitchen renovations are complete, I want to do the same!

      I think my biggest challenge was coming home after a long day at uni and work and having to think about not only cooking but making it look gorgeous.

      I have loved being challenged to not spend money on food out – cooking your own food makes you appreciate your own taste buds. Food out now feels almost disappointing especially in NZ where it is quite expensive.

      I would love to read your version of the challenge – hope you get to do it! It is lots of fun 🙂
